Atlantis Casino Resort Spa and Bistro Napa invite guests to an evening of innovative food and wine pairings, featuring notable selections from Paso Robles wine pioneer Justin Vineyards & Winery, on Thursday, March 29, 2012 at 6p.m.
Founded in 1981 by Justin Baldwin, Justin Winery recently celebrated its 30th anniversary. The vineyard is located in Paso Robles, a region of California that has witnessed a myriad of changes in the past three decades. When Justin first purchased the 160-acre vineyard, and started planting Bordeaux varietals, the area was a relatively sleepy Central Coast enclave that had not seen a lot of vineyard development. The region now boasts the third highest concentration of wineries in the United States and has been the subject of widespread attention for its bold and complex wines.
In addition to its varietally-labeled bottling, which guests will experience with the 2010 Sauvignon Blanc and 2009 Reserve Cabernet Sauvignon, the master blenders at Justin also pay tribute to the great wines of Bordeaux with the 2009 Justification, a Cabernet Franc and Merlot blend in the style of Cheval Blanc and its iconic Cabernet-based blend Isosceles, which was modeled on the great wines of Pauillac and Margaux. Over the years, Justin also introduced Rhone varietals into its program with the 2009 Savant, a Cabernet Sauvignon and Syrah blend that brings together the best of the Rhone Valley and Bordeaux in Paso Robles. The Bistro Napa culinary team enjoyed working with the complex profiles of these special wines to develop a menu to complement the wide-ranging flavors. Click here to view the menu.
